Corn & Chicken Fritters
These fritters are great for packed lunches or a light dinner! Pair with a salad, brown rice or on a wrap for a filling tasty meal that’s packed with protein, flavour and is super easy to make!
Servings: 4-5 (2 patties to a serve)
Ingredients
- 2-3 Cloves of Garlic
- 1-2 eggs
- 500g Chicken Mince
- 1/2 Cob Corn
- 1/2-1 Onion
- Up to 1/4 cup of chopped coriander & Mint
- Optional General herbs and spices – chili, salt, pepper, cumin, paprika etc to taste
Method
- Finley chop vegies and herbs
- Mix all ingredients well in bowl
- Heat saucepan to medium high heat
- Roll into small golf ball sized balls
- Press each fritter flat on saucepan and cook until golden and cooked through on each side
