INGREDIENTS:

  • Handful of cashews
  • Frozen Banana
  • Generous dash of coconut cream
  • Coconut oil
  • Sheep’s Yoghurt
  • Macadamias (optional)
  • Soft dates (optional)

METHOD:

  1. Take a handful of cashews and blend into a fine meal.
  2. Add a frozen banana and a generous dash of coconut cream then blend until smooth (aim for a soft healthy ice-cream consistency)
  3. On a hot pan aborned with coconut oil, spoon the ice-cream in, using a spatula to mix and stir. The higher the temperature, the more you’ll notice caramelisation of the banana
  4. After 5 or so minutes of keeping an eye on it, the colour will become less white and browner as you continue to stir. The consistency will also thicken when done.
  5. Optional: add lightly toasted macadamias and some soft dates.
  6. Serve with a small amount of sheeps yoghurt.

The beauty of this recipe is the extensive amount of fabulous substitutes and variations to experiment with and add to the recipe in step 5.
