Hot Banana Mash
INGREDIENTS:
- Handful of cashews
- Frozen Banana
- Generous dash of coconut cream
- Coconut oil
- Sheep’s Yoghurt
- Macadamias (optional)
- Soft dates (optional)
METHOD:
- Take a handful of cashews and blend into a fine meal.
- Add a frozen banana and a generous dash of coconut cream then blend until smooth (aim for a soft healthy ice-cream consistency)
- On a hot pan aborned with coconut oil, spoon the ice-cream in, using a spatula to mix and stir. The higher the temperature, the more you’ll notice caramelisation of the banana
- After 5 or so minutes of keeping an eye on it, the colour will become less white and browner as you continue to stir. The consistency will also thicken when done.
- Optional: add lightly toasted macadamias and some soft dates.
- Serve with a small amount of sheeps yoghurt.
