This is an easy and quick recipe packed full of protein to keep you full throughout the morning.

INGREDIENTS:

  • 2 eggs
  • Salmon dotted around on top of the omlette
  • Oil for frying (extra virgin used)
  • 1/3 spring onion, sliced and spread on top
  • salt and pepper to taste
  • 1 teaspoon goats cheese, sprinkled on top

METHOD:

  1. Combine egg and milk or water in a bowl. Whisk.
  2. Add salmon, cheese and sping onion.
  3. Heat oil in a frying pan.
  4. Add the mixture and cook one side of the omelette for a minute or until set.
  5. Flip the omelette and heat the other side until it is set.
  6. Fold in half and serve with salt and pepper.
