If you need to make dinner in 5 minutes this recipe is for you! Not only can this meal be whipped up in a flash it is jam packed with amazing ingredients that your body, gut and immune system will love!! I recommend using a homemade bone broth as this is the key in making it nutritious and makes the flavour amazing!!

INGREDIENTS:

  • 1 Litre of homemade stock (Chicken or beef)
  • 500g of mince ( Chicken, beef or lamb)
  • 8cm of ginger grated
  • 3 garlic cloves, minced
  • 3cm lemongrass
  • 1-2 Tablespoons of fish sauce
  • 1Tablespoon Tamari
  • 1 large carrot –grated or chopped- I use the vegetable spireler
  • 1 large zuchinni- grated or chopped – I use the vegetable spireler
  • Small handful of mint
  • ½ lemon

METHOD:

  1. Heat stock in a large saucepan or wok
  2. Add ginger, garlic and lemongrass (or chilli to make it spicy)
  3. Add mince and allow to cook in stock
  4. Add fish sauce, tamari and lemon
  5. Add carrot, zucchini and mint
  6. Try broth to see if it needs more fish sauce or tamari
  7. Serve when vegetables are par cooked

I served mine with a big spoon of fermented vegetables. So yummy!!

My 4 year old eats this too, so don’t be afraid to serve it to the kids. You can add more broth to dilute if the spices are strong.
