Orange & Lemon Chicken

INGREDIENTS:

  • 1 large organic chicken
  • 2 oranges
  • 2 lemons
  • a few twigs or rosemary (or whatever you have in the garden)
  • 2 cloves of garlic

METHOD:

  1. Squeeze the oranges and lemons
  2. place half of an orange, half of a lemon, and the whole garlic cloves in the cavity of the chicken
  3. Put the rest of the oranges and lemons, along with their juice, in the pan around the chicken.
  4. Sprinkle with salt and pepper (oil isn’t necessary on this one)
  5. Cover with foil and put in the oven on 160 degrees for 4 or more hours.

*If you’re short on time, cook in the oven on 180 degrees for around 1 hour or until cooked.
