Whiting with Spinach and Salad
We’re so lucky to have delicious fresh fish, prawns and oysters sold on Saturdays and Wednesdays near our house in Newcastle Street. The whiting is out of this world, so we have this a lot. However, you could substitute it with any other gorgeous fresh fish.
INGREDIENTS:
- 8 pieces of fresh whiting fillets (2 per person)
- 1 tablespoon of butter (omit if dairy free)
- 3 large cloves of garlic
- 2 tablespoons of olive oil
- salt and pepper to taste
- 8 handfuls of baby spinach leaves
- 2 handfuls of fresh mixed salad leaves per person
- 1 large ripe avocado
METHOD:
- Pan fry fish with oil, butter and garlic until one side is golden and fish is ready to be flipped.
- Add baby spinach and finish cooking the fish.
- Create salad, then serve.
