Chewy, Crunchy, Chocolate Balls
Nut balls are fabulous to have on hand, especially when they’re this delicious! This recipe makes a chewy, crunchy and chocolatey ball that will tangle your taste buds and keep you on the move – or the ball rolling – all morning or afternoon.
They only have 100g of nuts so can easily be made “nut-free” by substituting your favourite seeds. AKA, these are perfect for a nut-free lunchbox treat.
We like making these ones smaller than usual balls, something to try if you’re often having two or three nut balls rather than stopping after one.
INGREDIENTS:
100g raw almonds
1 scoop protein powder (lots of options for a fabulous powder in clinic as well as some great options in Peter’s blog on protein powders.)
1 tablespoon chia seeds
80g oats (we use Bob’s wheat free as they’re our favourite. You can purchase them at the clinic or online)
25g buckinis (raw or activated for more crunch)
30g cacao (we use Power Superfoods Cacao Gold because you’re only as good as your ingredients. Available at the clinic)
1 tablespoon tahini
1 tablespoon honey
6 dates
20g coconut oil
Splash of water (or added until the mixture kneads into itself)
Optional (but advised) – 10g goji berries
METHOD:
Blend all ingredients – except berries – in a Thermomix or food processor until the mixture is fine and kneads into itself. You may need to add more water along the way. Add goji berries and stir until combined. Roll into small balls and freeze.
Makes roughly 20 small balls.
