Dayna’s Favourite Chicken Stock
We always say your soups and risottos are only as good as your stock!
Stocks that are bought are often full of added sodium and preservatives and they are so easy to make. We love the smell of stock simmering on the stove in winter.
This is a recipe that has been handed down to us by a dear friend Rosetta Roncolato
INGREDIENTS:
- 18 chicken wings
- 1 large ox tail
- salt and pepper
- 1 tablespoon of Apple Cider Vinegar
- 4 sticks of celery
- 1 big carrot
- 1 handful each of sage leaves, sprigs of thyme and basil
- 1 bunch parsley
- 2 bay leaves
- 8L of purified water
METHOD:
- Place all ingredients into a large boiler.
- Cover with purified water.
- Bring to the boil and simmer with the lid a little off for 3 hours.
- Strain then divide into containers to freeze
