INGREDIENTS:

  • 3 large onions, quartered
  • 6 medium carrots, chopped
  • 2 medium sweet potato, sliced
  • 1/3 cup cold pressed olive oil
  • 60g pure butter, melted
  • 1/3 cup pure honey
  • 1 tbsp wholegrain mustard
  • 1 tbsp sesame seeds, toasted

METHOD:

  1. Preheat the oven to 180oC/160oC for fan forced oven.
  2. Combine all of the vegetables in a large baking dish and drizzle with half of the oil.
  3. Bake uncovered for approximately 1 hour or until the vegetables are just tender.
  4. Combine the butter, remaining oil, honey and mustard in a bowl or jug. Pour this mixture over the vegetables and bake them for a further 20 minutes or until the vegetables are soft and the glaze is slightly thickened.
  5. Sprinkle with sesame seeds and serve.
