Lamb chops with halloumi salad
Lamb chops are a fantastic resource to keep in the freezer. They’re definitely one of our family favourites, and with the halloumi salad, a quick, easy and delicious dinner.
INGREDIENTS:
- 1 packet of lamb chops (fridge or freezer)
 
For the salad…
- 2 big handfuls of mixed salad leaves per person (rocket, spinach, lettuce)
 - 2 medium carrots, peeled as pictured
 - 3/4 cup of fresh peas
 - 1 cup of snow peas, finely sliced
 - Block of halloumi (omit if following the modified elimination plan)
 - slug of macadamia oil, to dress
 - salt and pepper to taste
 
METHOD:
- Cook the chops on the barbeque until almost cooked. Remove, and let sit under aluminium to rest.
 - Cut halloumi into thick slices (50ml), one per person and cook 3 minutes on each side or until golden brown.
 - Assemble salad.
 - Serve and enjoy!
