Lemon Pepper Chicken and Bok Choy

Serves 1

Ingredients

  • 100g chicken breast, sliced
  • Lemon Pepper seasoning
  • 250g bok choy
  • 3 cloves of garlic, crushed
  • 1 cm piece fresh ginger, grated
  • 2 tbsp tamari
  • ¼ cup filtered/purified water

Method:

  1. Coat chicken strips in lemon pepper seasoning to taste
  2. Gentle dry fry until cooked and set aside
  3. To the same pan add water. Stir to remove any chicken flavours coating the pan.
  4. Add garlic, ginger, tamari. Stir.
  5. Add bok choy and cover
  6. Steam for between 2 and 5 minutes, depending on taste
  7. Serve bok choy topped with chicken, remaining tamari mix and a splash of fresh lemon juice
