Mango and Macadamia Chicken Stir-Fry

Stir frys can sometimes be thought of as “boring”, but not this one!

Serving the carrot and snow peas raw is a great way to reduce cooking time, and keep elements of raw food in your meal.

Serves 4

INGREDIENTS:

  • 1 packet of chicken breasts, rinsed in water and chopped into thin strips
  • 2 cloves of garlic
  • 2 tablespoons of sesame oil
  • salt and pepper to taste
  • 1 tablespoon extra virgin olive oil
  • 1 head of broccoli, cut into medium pieces (including the stem)
  • 1 red cupsicum, cut into strips
  • 3 Bok Choy, sliced lengthways
  • 3 tablespoons of tamari or coconut amino sauce
  • 1 tablespoon of sesame oil
  • salt and pepper to taste
  • teaspoon of fish sauce
  • splash of water
  • 1 medium mango, halved and cut into thin strips
  • 3/4 cup of macadamia oil, pan toasted
  • 1 bunch of corriander
  • 1/2 a red onion, finely diced
  • 2 carrots, peeled
  • 3 handfuls of snow peas, topped-and-tailed

METHOD:

  1. Pan fry chicken until golden. Set aside
  2. Cover broccoli and other veg with lid and steam for 5 minutes or until Al dente.
  3. Prepare serving ingredients (macadamia etc) as well as raw salad (carrot etc).
  4. Set ingredients on table for self serve.
