Mango Coconut Slab
For something fruity, you might like to whip up some of one of our favourite summer treats!
You’ll be hard-pressed to find something as easy and quick to make, that’s just as fresh to enjoy!
INGREDIENTS:
Base
- 170g mixed nuts
- 40g coconut flakes
- 8 dates
- pinch of salt
Mango Cream
- 2 small / medium mangos to blend
- splash of coconut milk (about 1 cm of a 400ml can)
- 1 tablespoon of coconut oil
- 1 small/medium mango to slice and splay on top
METHOD:
- Pulse nuts and coconut in a blender until roughly chopped. Set aside.
- Blend dates and salt until smooth (you may need to add 1-2 teaspoons of coconut oil if the mixture is cold). Mix dates and nuts together and press into a square brownie pan. Pop into the freezer.
- To make the mango cream simply slice 2 mangos and blend with coconut oil and milk until smooth. Pour over base prepared as above.
- Slice the remaining mango finely and lay on top on the slice.
- Freeze until firm, removed from freezer and cut into peices (after about 30-45mins). Pop the slices back into the freezer for you to enjoy later!
