For something fruity, you might like to whip up some of one of our favourite summer treats!

You’ll be hard-pressed to find something as easy and quick to make, that’s just as fresh to enjoy!

INGREDIENTS:

Base

  • 170g mixed nuts
  • 40g coconut flakes
  • 8 dates
  • pinch of salt

Mango Cream

  • 2 small / medium mangos to blend
  • splash of coconut milk (about 1 cm of a 400ml can)
  • 1 tablespoon of coconut oil
  • 1 small/medium mango to slice and splay on top

METHOD:

  1. Pulse nuts and coconut in a blender until roughly chopped. Set aside.
  2. Blend dates and salt until smooth (you may need to add 1-2 teaspoons of coconut oil if the mixture is cold). Mix dates and nuts together and press into a square brownie pan. Pop into the freezer.
  3. To make the mango cream simply slice 2 mangos and blend with coconut oil and milk until smooth. Pour over base prepared as above.
  4. Slice the remaining mango finely and lay on top on the slice.
  5. Freeze until firm, removed from freezer and cut into peices (after about 30-45mins). Pop the slices back into the freezer for you to enjoy later!
