Savoury Quinoa Breakfast Porridge
This breakfast is so delicious and filling. Great for people who love oats but crave savoury foods in the morning. Also fantastic for getting your recommended
vegetable intake for the day.

Cook time: 10-15 minutes
INGREDIENTS:
For porridge
- ½ cup of quinoa flakes
- 1 cup of water (or 1 cup of stock)
- 1 tablespoon of preferred stock paste
For Topping
- 1 tomato
- Handful of green beans
- 2 large mushrooms
- ½ an avocado
- 1 teaspoon of capers
- ½ clove of garlic
- ¼ finely sliced leek or onion
- Cold Pressed olive oil
- Balsamic vinegar
- Seeds or nuts
METHOD:
- Place quinoa flakes in a saucepan with water and stock, bring to the boil and reduce heat. Stir occasionally until desired thickness is achieved.
- In a separate pan, add oil, garlic and onions. Cook for 3 minutes. Add the rest of vegetables (except avocado) until cooked through.
- Pour quinoa into a bowl and add vegetables. Top with fresh herbs, avocado, nuts or seed and a drizzle of balsamic vinegar and olive oil. Add salt and pepper to taste.
