Sushi Bowl
SERVES 1 Large Bowl or 2 Smaller side bowls
Ingredients:
- 1 Cup of Brown Rice
- Half a block of tasty tempeh chopped
- Half a cucumber peeled into ribbons
- Half a carrot peeled into ribbons
- Half a chopped spring onion
- 4 Sheets of snack sized nori
- 1 tablespoon of Mayo (We use the brand Good Fat)
- Sriracha or hot sauce to taste
- Sesame seeds
Method:
- Prepare brown rice until cooked.
- Whilst the brown rice is cooking cut one cucumber and one carrot in half and use a vegetable peeler to peel them both lengthways to form ribbons.
- Finley slice the spring onion.
- Bring a frypan to medium high heat and cook the tempeh until brown and crispy.
- Mix the mayo with hot sauce to taste and then assemble the bowl.
- Top with sesame seeds and a crack of salt and pepper.
