Sushi Bowl

SERVES 1 Large Bowl or 2 Smaller side bowls

Ingredients:

  • 1 Cup of Brown Rice
  • Half a block of tasty tempeh chopped
  • Half a cucumber peeled into ribbons
  • Half a carrot peeled into ribbons
  • Half a chopped spring onion
  • 4 Sheets of snack sized nori
  • 1 tablespoon of Mayo (We use the brand Good Fat)
  • Sriracha or hot sauce to taste
  • Sesame seeds

Method:

  1. Prepare brown rice until cooked.
  2. Whilst the brown rice is cooking cut one cucumber and one carrot in half and use a vegetable peeler to peel them both lengthways to form ribbons.
  3. Finley slice the spring onion.
  4. Bring a frypan to medium high heat and cook the tempeh until brown and crispy.
  5. Mix the mayo with hot sauce to taste and then assemble the bowl.
  6. Top with sesame seeds and a crack of salt and pepper.
