Tuna Salad with Mango Dressing
Serves 1
This is no ordinary salad. It’s filling with incredibly fresh flavours that will leave you wanting more. Packed with protein, fibre and complex carbohydrates its a perfect work lunch meal. This salad can be prepped in advance omitting the tuna and dressing till when you’re about to serve.
Ingredients:
- Half a head of lettuce we used baby cos lettuce
- 1 pink lady apple – finely diced
- 1/2 cucumber finely diced
- 1/2 punnet of cherry tomatoes
- 1/2 a can of chickpeas
- 1 can Sirena lite or Good Fish Tuna
Dressing
- 1/2 cup diced frozen mango
- 1 tsp Apple cider vinegar
Method
- Chop up all salad ingredients and mix together in a bowl
- Place dressing ingredients into a blender and blend until smooth
