Tuna Salad with Mango Dressing

Serves 1

This is no ordinary salad. It’s filling with incredibly fresh flavours that will leave you wanting more. Packed with protein, fibre and complex carbohydrates its a perfect work lunch meal. This salad can be prepped in advance omitting the tuna and dressing till when you’re about to serve.

Ingredients:

  • Half a head of lettuce we used baby cos lettuce
  • 1 pink lady apple – finely diced
  • 1/2 cucumber finely diced
  •  1/2 punnet of cherry tomatoes
  •  1/2 a can of chickpeas
  • 1 can Sirena lite or Good Fish Tuna

Dressing

  • 1/2 cup diced frozen mango
  • 1 tsp Apple cider vinegar

Method

  1. Chop up all salad ingredients and mix together in a bowl
  2. Place dressing ingredients into a blender and blend until smooth
