Vegetable Frittata
INGREDIENTS:
- 2 onions
- 2-4 cloves garlic chopped finely
- 1 long red chilli chopped finely
- Big bag of baby spinach
- 2 Zucchini grated
- Large piece pumpkin or sweet potato grated
- 1 tbsp coconut flour
- 6 – 8 eggs whisked
- Parmesan cheese (optional)
- Salt and pepper
METHOD:
- Cook the onions, garlic and chilli until softened. Add the big bag of spinach and place a lid on the frypan and let the spinach wilt.
- Meanwhile grate the zucchini and pumpkin and any other vegetable desired and place in a large bowl.
- Add the onion and spinach mix to the grated vegetables and mix thoroughly.
- Place this mix into a ceramic dish and pat down well.
- Sprinkle the top with parmesan cheese if desired.
- Whisk the eggs with the salt and pepper and coconut flour and then immediately pour over the vegetables.
- Bake in the oven for 45 mins or until cooked through.
