Zoodles with mince and pumpkin sauce

INGREDIENTS:

One spiralised zucchini per person

Chicken mince

400g pumpkin

3/4 brown onion

2 large cloves of garlic

2 tablespoons nutritional yeast

salt and pepper

50g coconut milk


METHOD:

  1. Pan fry mince in extra virgin olive oil
  2. Meanwhile combine pumpkin, brown onion, garlic, nutritional yeast, coconut milk, salt and pepper and blend till a paste.
  3. Cook for 8 mins at 100 degrees on speed 2/3.
  4. Blend on speed ten for a minute or until smooth sauce.
  5. Make a bed of spiral zucchini, place mince ontop and cover in sauce.
