Strawberry Chia Pudding
Deliciously simple!
Serves 4
INGREDIENTS:
- 400 g strawberries
- 400 ml coconut milk
- ¼ cup maple syrup
- 1 teaspoon vanilla powder or essence
- ½ cup chia seeds
- Zest one large lime or lemon
METHOD:
- Combine ingredients in blender and blend on a high speed until well mixed.
- Refrigerate overnight or until thickened
- Serve in a glass or jar
* To make it smoother and eliminate the ‘tapioca-like’ texture of the chia seeds blend a bit longer
