Prawn and Pesto Salad

Summer is well and truely in the air so it’s the perfect time of year for prawns!
We do enjoy prawns on occasion, and if you are a prawn person, a salad is definitely a great alternative to a sandwhich.
INGREDIENTS:
For the salad…
- 1 handful of prawns; per person
- Palm size amount of salmon/ trout
- 2 handfuls of rocket and baby spinach; per person
- 1 tablespoon of pesto per person (handmade variety if you’re seeking df or otherwise)
- 1 teaspoon of goats fetta crumbled; per person
- 4-6 cherry tomatos; per person
METHOD:
Combine, serve and enjoy!
