Speedy Lamb Salad
This meal is simple and no-fuss without compromising on flavour; if we do say so ourselves!
As always, the flavour in this recipe does rely on the quality and freshness of our ingredients. We love our local stall holders at the Newcastle City Farmers Market and get all elements from this recipe there.
INGREDIENTS:
- 1 palm size amount of lamb (cut of your choice, you can substitute beef if you prefer)
- 4-5 cherry tomatos
- 1/2 standard size cucumber; we got special ones from the markets this week, as you prefer.
- rocket and mixed greens
- extra virgin olive oil drizzled to serve (we like braggs) OR Macadamia Oil (we like Brookfarm).
METHOD:
- Pan fry your meat in a small drizzle of olive oil until cooked to your preference.
- Combine salad and serve.
