Yvonne’s Veggie Mash

Ingredients

2 x each of the following root vegetables:

  • beetroot
  • swede
  • turnip
  • carrot
  • sweet potato
  • parsnip

Plus

  • 1/4 pumpkin
  • 1 bulb of garlic
  • 1 Spanish onion or leek

 

Method

  1. Peel and roughly chop all ingredients
  2. Pop them in a large baking tray
  3. Sprinkle some Himalayan salt and pepper to taste
  4. Add a drizzle of olive oil
  5. Bake at 180oC for 90min…turning veggies a couple of times throughout cooking process
  6. Once cooked, mash all ingredients together, add some lightly steamed peas and stir through mash.
