Yvonne’s Veggie Mash
Ingredients
2 x each of the following root vegetables:
- beetroot
- swede
- turnip
- carrot
- sweet potato
- parsnip
Plus
- 1/4 pumpkin
- 1 bulb of garlic
- 1 Spanish onion or leek
Method
- Peel and roughly chop all ingredients
- Pop them in a large baking tray
- Sprinkle some Himalayan salt and pepper to taste
- Add a drizzle of olive oil
- Bake at 180oC for 90min…turning veggies a couple of times throughout cooking process
- Once cooked, mash all ingredients together, add some lightly steamed peas and stir through mash.
