Salmon Patties

INGREDIENTS:
- 2 large tins of salmon
- 1 onion
- 1 lemon
- 6 potatoes
METHOD:
- Boil and mash potatoes
- Sautee onion in a fry pan
- Mix together onion, potatoes, rind of 1 lemon, a squeeze of lemon juice and 2 large tins of salmon
- Use a tablespoon to scoop into rough balls, and spray with olive oil
- Bake in a moderate oven for 30 minutes or until brown
- Serve with a moist salad
