Strawberry Chia Pudding

Deliciously simple!

Serves 4

INGREDIENTS:

  • 400 g strawberries
  • 400 ml coconut milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla powder or essence
  • ½ cup chia seeds
  • Zest one large lime or lemon

METHOD:

  1. Combine ingredients in blender and blend on a high speed until well mixed.
  2. Refrigerate overnight or until thickened
  3. Serve in a glass or jar

* To make it smoother and eliminate the ‘tapioca-like’  texture of the chia seeds blend a bit longer
