Almond, ricotta and orange salad
This is one of our all time favourite salads. The toasted nuts give a lovely earthy tone, while the ricotta is nice and light and the orange gives a beautiful sweet but tangy quality.
INGREDIENTS:
- Plate full of mixed lettuce leaves
- 1/2 cup of almonds, pan fried in coconut oil at high heat until brown and warm.
- 1 tomato, diced
- 1/2 orange, diced
- 1/2 orange juice (freshly squeezed)
- 1/2 cup of ricotta
- 1/2 avocado
- generous slosh of macadamia oil
- salt and pepper to taste
METHOD:
Combine all ingredients into a salad bowl
