Banana and Apple Spelt muffins/ bread
This is a favourite in the office and is made by Hannah and Dayna on a weekly basis.
Ingredients
- 3 ripe bananas peeled
- 2 red or green apples (core and peel and cut in 1 cm pieces)
- 4 tablespoons coconut milk (from a carton)
- 3 tablespoons coconut oil
- 230 g spelt flour
- 200g coconut sugar (Dayna uses 100g)
- 1 small teaspoon bicarbonate of soda
- half teaspoon baking powder
- half teaspoon cinnamon
Method
- Pre-heat fan forced oven to 180 degrees
- Either line a 12 hole muffin with cases or line a bread tin with baking powder
- Mix the banana, coconut oil and coconut milk in a large bowl. When done add the dry ingredients and combine together and then add the diced apple and combine really well and then pour the mix into your tin of choice.
Muffin tray – cook for 25 minutes (makes 12), Loaf tin – cook for 40/45 minutes - Bake until golden and a knife inserted in the centre comes out clean.
- Once cooked , leave to cool for 10 minutes
Although spelt flour is best for this recipe we have also made it with plain gluten free flour and it was nice.
* note the dough is a bit thick but it all comes together perfectly when baked.
