Berry Cobbler

Serves 1-2

Ingredients:

Berry Mix

  • 1 Cup of frozen mixed berries
  • 1 1/2 – 2 Tablespoons of Maple Syrup
  • 1 teaspoon of Coconut oil or Ghee
  • Juice of half a lemon

Crumble

  • 2 tablespoons of almond flour
  • 2 tablespoons of oat flour
  • Crack of salt

Method:

  1. Preheat oven to 180C
  2. Combine frozen berries, 1/2 to 1 tablespoon maple syrup and the squeeze of half a lemon in an oven safe dish.
  3. In a separate bowl mix the coconut oil or ghee, almond and oat flour and a crack of salt until it forms a crumbly like consistency.
  4. Press the crumble mixture evenly on top of the berries and put the dish into the oven for 20-30 minutes until golden. Serve on its own or with coconut yoghurt.
