Blueberry Pancakes
INGREDIENTS:
- 2 eggs
- 1 tbsp collagen powder
- 1 tbsp coconut flour
- 1 dsp coconut yoghurt
- Blueberries
METHOD:
- Whisk together all the ingredients except the blueberries. The mix should be quite thick, if not add some more coconut flour.
- Heat some butter in a frypan and place spoonfuls of the mixture and top with blueberries.
- Cook and then flip over and cook the other side.
- Top with more blueberries and coconut yoghurt
