Breakfast Bar Slice

These bars are super yummy and are packed with fantastic proteins and all the good carbs. For a nut free alternative swap out the pecans and replace them with a mix of sunflower seeds and pepitas.

INGREDIENTS:

  • 1 1/4 cup of pecans
  • 1 cup of fine desiccated coconut
  • 1 1/2 cup of dry pitted dates
  • 2 tablespoons of honey
  • 1/2 tablespoon of coconut oil
  • 1/2 teaspoon cinnamon
  • pich of salt

METHOD:

  1. Preheat the oven to 170 degrees
  2. Line a rectangular or square baking tray with baking paper
  3. Place all ingredients in a food processor and blend until smoothish- you want to keep some texture
  4. Press mixture evenly into your baking tray
  5. Bake for 15 minutes or until lightly browned
  6. Let cool and cut into squares
  7. Store in an air tight container
