Breakfast Burrito

Serves 1

Ingredients:

  • 1 egg, whisked
  • Snow pea sprouts
  • Fresh coriander and mint
  • 70g chicken breast, cooked
  • Salt and pepper to taste
  • Optional Hot Baby Chilli

 

Method:

  1. Whisk egg, salt and pepper
  2. Add mixture to frypan, and cook on low heat, flipping once as needed
  3. Remove omelette from heat
  4. Place chicken, herbs and snow pea sprouts in a line down centre of omelette
  5. Add a splash of lime juice &/or tamari soy
  6. Roll and enjoy!

**TIP: If watching your fat intake, use a piece of baking paper at the base of your frypan to stop your egg mix sticking without using oil
