Breakfast Salmon Frittata
Serves 5
Ingredients:
- 5 eggs
- 200g tinned red salmon
- 10g capers, finely chopped
- 2 green onions, sliced (green part only)
- 1 garlic clove, crushed
- 2 tsp fresh dill, finely chopped
- Salt and pepper to taste
Method:
- Whisk egg, garlic, dill, salt and pepper together
- With a fork, break salmon into small flakes and add green onion and capers. Combine well.
- Add salmon mix to a lined bread loaf tin
- Pour egg mixture over salmon mixture.
- Place mix into the oven for about 15 minutes, or until egg is completely cooked.
- Slice into 5 even portions.
- Serve with a splash of lime juice &/or tamari soy
**TIP: This will keep in the fridge for several days and makes for a tasty breakfast on the run.
