Breakfast Salmon Frittata

Serves 5

Ingredients:

  • 5 eggs
  • 200g tinned red salmon
  • 10g capers, finely chopped
  • 2 green onions, sliced (green part only)
  • 1 garlic clove, crushed
  • 2 tsp fresh dill, finely chopped
  • Salt and pepper to taste

 

Method:

  1. Whisk egg, garlic, dill, salt and pepper together
  2. With a fork, break salmon into small flakes and add green onion and capers. Combine well.
  3. Add salmon mix to a lined bread loaf tin
  4. Pour egg mixture over salmon mixture.
  5. Place mix into the oven for about 15 minutes, or until egg is completely cooked.
  6. Slice into 5 even portions.
  7. Serve with a splash of lime juice &/or tamari soy

**TIP: This will keep in the fridge for several days and makes for a tasty breakfast on the run.
