Broccoli, ginger and green apple salad with peanut sauce

INGREDIENTS:

  • Broccoli
  • Ginger
  • 1 tsp sesame oil
  • Apple

Sauce

  • 2 tsp peanut butter
  • 1 Tbsp water
  • 1 Tbsp tamari
  • 1 tsp sesame oil
  • pinch of salr
  • 1 Tbsp macadamia oil

METHOD:

  1. Cut broccoli into thin strips and pan fry with a few teaspoons of water.
  2. Add ginger, cut into thin strips, and cover with lid.
  3. Cook covered until moisture has evaporated and broccoli has softened slightly.
  4. Add a teaspoon of seasame oil.
  5. Remove lid and continue to cook, letting broccoli and ginger become golden.
  6. Meanwhile, cut apple into thin strips.
  7. Once broccoli and ginger are cooked, transfer to bowl. Add apple.
  8. Combine sauce ingredients in a bowl, serve ontop of salad
