Broccoli, ginger and green apple salad with peanut sauce
INGREDIENTS:
- Broccoli
- Ginger
- 1 tsp sesame oil
- Apple
Sauce
- 2 tsp peanut butter
- 1 Tbsp water
- 1 Tbsp tamari
- 1 tsp sesame oil
- pinch of salr
- 1 Tbsp macadamia oil
METHOD:
- Cut broccoli into thin strips and pan fry with a few teaspoons of water.
- Add ginger, cut into thin strips, and cover with lid.
- Cook covered until moisture has evaporated and broccoli has softened slightly.
- Add a teaspoon of seasame oil.
- Remove lid and continue to cook, letting broccoli and ginger become golden.
- Meanwhile, cut apple into thin strips.
- Once broccoli and ginger are cooked, transfer to bowl. Add apple.
- Combine sauce ingredients in a bowl, serve ontop of salad
