Whiting and Green Vegetables
INGREDIENTS:
- 3 pieces of whiting per person
- 1 medium clove of garlic
- 1 tablespoon of high quality butter (omit if dairy free)
- 2 tablespoons of extra virgin olive oil
- pinch of salt to taste
- 2-3 broccolini per person, chopped into chunks
- 1 generous handful of spinach
METHOD:
- Pan fry garlic with oil and butter.
- Add broccolini to pan and fry for 1 minute.
- Add whiting to pan until cooked.
- Once Whiting is cooked add spinach to the pan until it is slightly wilted.
- Serve and enjoy.
