Cacao Teff Porrdige
These cooler mornings are perfect for a hearty bowl of porridge. Teff is a gluten free grain with a beautiful nutty flavour, a perfect alternative to oats. Packed with iron, magnesium, calcium, protein and fibre it’ll keep you going all morning.
Serves 1
Time 20 minutes
INGREDIENTS:
- ½ cup teff
- 1 cup of milk of choice plus extra for serving
- 1 teaspoon of raw cacao powder
- 1 teaspoon of maca powder (optional, but delicious)
- Topping of choice- nuts, seeds, bee pollen, fruit, honey, tahini

- pinch of cinnamon
METHOD:
Place teff & milk on stovetop and cook over med-high heat until it starts to boil
Turn heat off and cover with lid
Leave for 10-15 minutes
By now the moisture should have evaporated and teff should be soft and fluffy like couscous. If not cook on low heat for a further 5 minutes with the lid off, stirring occasionally – add more liquid if necessary
Once reached desired consistency, add an extra dash of milk/water and stir through depending on how runny you want it
Garnish with toppings of choice & enjoy!
