Crackers are loaded with carbs and really, are rather bland in comparison to lovely roasted carrots. Packed with nutrients and flavour, this recipe is sure to impress for afternoon drinks or a simple snack, rather than resorting to more sugary options.
– 1 carrot, finely sliced or cut in a mandolin
– 1/3 of a cup of high quality coconut oil
– 1/2 of one ripe avocado
– 1 T lemon juice
-1 ball/ t of labneh
-salt and pepper, to taste
– Dill, to garnish
Pour oil into medium size pan and allow to become hot. Add carrot, salt and pepper, and cook for about 5 minutes or until golden.
Mash avocado, lemon, as well as salt and pepper. Serve with dill and labneh cheese. Devour.
