Cashew and stewed apple stack
Stewed apples are great for bowel movements and are a delicious way to sweeten up dessert. This stack came about because of just that, plus who doesn’t love cashew cream?!
With only the apples and 1 teaspoon of maple syrup, this treat satisfies and is genuinely a super quick, healthy and delicious snack you don’t have to feel guilty about!
INGREDIENTS:
- 2 green apples
- 30mls of water
- 1tsp of cinnamon
- 1 1/2 cups of cashews
- 1/2 cup of water for cashew cream
- 1tsp maple syrup
METHOD:
Stewed apples:
Core and cut 2 green apples and steam in thermomix for 3 and a half minutes on stirring speed at 100 degrees. Make sure you add about 30mls of water before cooking.
You can also cook your apples in a saucepan on the stovetop with a little water.
I like to add a teaspoon of cinnamon also.
Cashew cream:
Blend 1 1/2 cups of cashews so they are coarse. In this instance, I wanted to keep some body and a paste consistency, but blend until the texture is right for you.
Add half a cup of water and 1 teaspoon of maple syrup and blend until you’re satisfied.
Layer paste and apples before popping in the freezer. Serves as is pictured. There may even be some left over apple and cashew cream to snack on!
