Cauliflower, cabbage, macadamia and blueberry salad with mustard dressing
INGREDIENTS:
- Cauliflower
- Cabbage
- Macadamias
- Blueberries
Mustard dressing…
- 1 tablespoon of Dijon
- 5 tablespoons of olive oil
- Salt to taste
- 1/4 of a lemon’s juice
- Shake and serve
METHOD:
- In a blender or food processor, blend Cauliflower into small pieces that resemble a rice-like consistency
- Chop cabbage and cook on a medium heat with olive oil until just cooked
- Toast macadamias until golden
- Wash blueberries and serve on top of the veg.
- Combine salad ingredients and top with mustard dressing
