Chicken Patties
My best tip for eating a healthy balanced diet is to be organised and prepared. Not only will it make you stick to your goals by eating healthy and wholesome but it will save you time in the long run.
Sunday is my day organise my fridge and freezer so I am prepared for the week. This salad seriously took me 1 minute to make! This is how meal prep saves you time. I have containers with all my salad things grated and chopped so all I gave to do is pick my selection and I am done!
This salad had red cabbage, fennel, kale, avocado, carrot, capsicum, tomato, pomegranate, sunflower seeds and fermented veggies. Chopped in my salad was my pre-prepared chicken patties. Dressing was olive oil, lemon juice and apple cider vinegar. So delicious and simple!
INGREDIENTS:
- 500 g chicken mince- Best organic or free range
- 1 clove of garlic minced
- 3cm ginger grated
- 1 Tablespoon of tamari
- 1 teaspoon of cumin
- 1 teaspoon of turmeric
- 1 teaspoon of coriander seeds
- Himalayan salt and pepper
METHOD:
- Combine all ingredients together
- Roll into small balls and coat with rice flour.
- Push down into patties and lightly fry on medium heat with coconut oil or ghee until each side is golden brown. (They can also be cooked in the oven on 180 for 15-25 minutes).
Add different flavours to change the taste. Other additions can be fresh herbs- oregano, thyme, basil, coriander, parsley. Fresh lemon rind, slivered almonds, cashews or chilli.
