Corn & Chicken Fritters

These fritters are great for packed lunches or a light dinner! Pair with a salad, brown rice or on a wrap for a filling tasty meal that’s packed with protein, flavour and is super easy to make!

Servings: 4-5 (2 patties to a serve)

Ingredients

  • 2-3 Cloves of Garlic
  • 1-2 eggs
  • 500g Chicken Mince
  • 1/2 Cob Corn
  • 1/2-1 Onion
  • Up to 1/4 cup of chopped coriander & Mint
  • Optional General herbs and spices – chili, salt, pepper, cumin, paprika etc to taste

Method

  1. Finley chop vegies and herbs
  2. Mix all ingredients well in bowl
  3. Heat saucepan to medium high heat
  4. Roll into small golf ball sized balls
  5. Press each fritter flat on saucepan and cook until golden and cooked through on each side
