Easy Chicken and Mushroom
Ingredients
- 1 tablespoon coconut oil (good quality)
- 2 cloves garlic
- 1/2 a brown onion
- 2 chicken thighs, cut into 1 cm strips
- 4 medium brown mushrooms
- Salt (a good pinch)
- Just a dash of water
Method:
- On medium heat, cook onion, garlic & salt in coconut oil for 5-10 minutes. Be careful not to burn the garlic.
- Chop mushroom into slices and add to pan. Continue cooking until mushrooms have almost cooked, another 5-10 minutes taking the lid on and off.
- Add chicken strips and water and cook with lid on until chicken is cooked, another 5 minutes.
Served here with mango salad
