Easy Pea-sy Tahini Dressing
Green peas are often reminiscent as a mushy side serving served alongside meat and boiled vegetables. Green peas are packed with protein, iron, vitamin C, vitamin K, and
vitamin A. This recipe reinvents the humble pea into something delicious and nutritious. It is perfect drizzled over salmon, falafels or roast vegetables.
Serves about 4
INGREDIENTS:
- 1/3 cup tahini
- ½ cup organic peas (defrosted)
- 1 small garlic clove
- 3 tablespoons lemon (approx. ½ a lemon)
- ¼ cup water (add more if you like it runnier)
- Handful of fresh parsley or coriander
- Salt and Pepper to taste
METHOD:
- Add all ingredients to high speed blender until smooth
