Fish Bake

Cooking Time: 30 minutes
INGREDIENTS:
- Orange Roughy (delicious, has no bones – great for the kids!)
- 2 lemons
- 2 tomatoes diced
- jar of green olives
- Fresh herbs
- Garlic
- Salt & Pepper
- Drizzle of oil
METHOD:
- Combine all ingredients except lemons in an ovenproof dish
- Squeeze lemons over the top, and place the two lemon halves in the dish
- Bake in oven at 190o for half an hour, or until cooked through
- Serve with rice
