Ginger and Coconut Slice
Ingredients
- 1 cup of pepitas
- 1 cup coconut sugar
- 1 ½ cups desiccated coconut
- 1 Tbsp coconut flour
- 2 Tbsp Ginger powder
- 1 Tbsp cinnamon
- 1 tsp Bicarb
- A good pinch of salt
- 4 eggs
- ½ cup of oil
- ½ cup water
- Topping – I used a mixture of seeds including sunflower seeds, pepitas, poppy & sesame – you can leave them off.
Method
- Preheat over 175 degrees c
- Line a lamington/large slice tin with non-stick baking paper
- Place all dry ingredients into your food processor and grind down until ingredients are finely chopped
- Pour into a mixing bowl
- Add eggs, oil and water
- Combine well
- Pour mixture into lined baking mould
- Cook for 25 minutes
- Slice is cooked when it bounces back when lightly pressed
