Green Scrambled eggs
Eggs are a great source of protein and a lovely addition to the diet. The added greens are a great way to bulk up daily vegetable intake and add flavour to breakfast. Having a savoury breakfast often sets my palette for the day and I find I’m quite happy without something sweet through the day. The greens used in this recipe were from the evening meal prior and so had garlic, lemon and olive oil throughout.
INGREDIENTS:
- Large handful of green vegetables
- 2 organic and free range eggs
- A dash of milk or water for the eggs
- A little olive oil
METHOD:
- Heat a large pan with olive oil.
- Throw in the vegetables and move around the pan regularly until they are hot.
- Meanwhile, whisk the 2 eggs with a dash of milk or water.
- Pour the eggs on top of the vegetables.
- Scramble the eggs and vegetables regularly.
- Serve with salt and pepper.
Bulking up the eggs are a great way to avoid bread first thing in the morning too!
