Mint Green Smoothie

This smoothie is my favourite, it tastes just like a mint chip milkshake!. For a quick and healthy snack this refreshing creamy mint green smoothie is dairy free and low carb. A great alternative for when sweet cravings arise plus a great way to get in an extra helping of green veg and good quality fats and protein.

INGREDIENTS:

  • 1 cup coconut milk
  • ½ cup water (or extra coconut milk)
  • Handful spinach leaves
  • ½ avocado
  • 3-4 drops of peppermint essential oil (or more to taste) or fresh mint leaves
  • 1 tablespoon collagen powder
  • 1 tablespoon MCT oil (or coconut oil)

METHOD:

Blend all together and pour over ice. If too thick add in extra coconut milk or water.

Variation: chocolate mint green smoothie – add 1 dessertspoon cacao powder and sweetener to taste.
