Lazy Falafel
I love falafel! It is the ‘meaty’ heart of any plant based diet and spices up any meal or snack. Chickpeas are also a microbiome superstar! They are an amazing source of insoluble fibre. This fibre cannot be broken down before it reaches your large intestines, meaning they are an incredible food source for your good gut bacteria and a sustained energy source for your cells. This recipe is so quick and easy, and will be the basis for my lunches all next week.
Apart from the time to soak the chickpeas – which took zero effort on my part – this takes 5 minutes to throw together.

Ingredients
- 2 cups dried chickpeas (soak overnight with a splash of apple cider vinegar) – do not use tinned chickpeas
- 1 onion
- 1 bunch of parsley
- 4 cloves garlic
- 1 tbsp cumin
- 1tsp ground coriander
- 1/2 tsp chilli powder
- salt and pepper to taste
- 2 tsp flour of choice (we use chickpea flour)
Method
Into a food processor throw (very roughly chopped) all ingredients apart for chickpeas and flour.
Now whizz until relatively smooth (about 1 min)
Add rinsed and drained chickpeas
Whizz until bitty, not smooth
Add flour of choice
That’s it! Portion and cook, or leave in the fridge for up to 5 days and cook as you go.
Traditionally, these are deep fried, but here are some healthier options:
– pan fry
– air fry
– waffle iron
– sandwich press
– oven
TIP: squish your falafel flat to reduce cooking time
