Maple Spiced Nuts


  • 1kg mixed raw nuts
  • ¼ cup maple syrup
  • 1 ½ tblspns cumin
  • 1 ½ tblspns cinnamon
  • 1 ½ tspns cayenne pepper
  • 1 ½ tspns cardamom
  • 1 tspn salt
  • 2 egg whites


  1. Preheat oven to 180c and line a large tray with baking paper and set aside.
  2. Place the nuts, maple syrup and all the spices into a large bowl and mix thoroughly.
  3. In a separate bowl place the egg whites and whisk until stiff peaks are formed.
  4. Stir the egg whites through the nut mixture until combined.
  5. Place the nut mixture onto the prepared tray. Bake for 30-40 minutes.
  6. For best results, carefully remove the tray from the oven and stir the nuts 2-3 times during the cooking process.
  7. Store in an airtight container.
  8. Enjoy!
