Mushroom omelette smash
This is a delicious medly of ingredients and the perfect breakfast recipe. If you’d like to serve this as an omelette, use a large pan that provides space for the ingredients to cook evenly.
INGREDIENTS:
- 2 eggs
- splash of milk
- salt and pepper to taste
- 3 mixed mushrooms (we get a mixed bag every week on Sunday at the Newcastle Farmers Markets)
- 1 bocconcini
- 1 small clove of garlic
- ghee, to fry
- serve with avocado
METHOD:
- Melt ghee in a pan on the stove top.
- Whisk the eggs and milk.
- Add egg and milk mixture once pan is sizzling.
- Add mushroom, garlic and cheese.
- Push eggs around until almost cooked, then remove and cover.
- Serve with salt and pepper and enjoy!
