Mushroom omelette smash

This is a delicious medly of ingredients and the perfect breakfast recipe. If you’d like to serve this as an omelette, use a large pan that provides space for the ingredients to cook evenly.

INGREDIENTS:

  • 2 eggs
  • splash of milk
  • salt and pepper to taste
  • 3 mixed mushrooms (we get a mixed bag every week on Sunday at the Newcastle Farmers Markets)
  • 1 bocconcini
  • 1 small clove of garlic
  • ghee, to fry
  • serve with avocado

METHOD:

  1. Melt ghee in a pan on the stove top.
  2. Whisk the eggs and milk.
  3. Add egg and milk mixture once pan is sizzling.
  4. Add mushroom, garlic and cheese.
  5. Push eggs around until almost cooked, then remove and cover.
  6. Serve with salt and pepper and enjoy!
