Simply roast one head of cauliflower and 1 large sweet potato in chucks at 180 degrees for about 40 minutes.

Dress with 3 tablespoons of extra virgin olive oil, 1 tablespoon of seeded mustard and a generous sprinkle of salt. I put these ingredients into a small jar (along the lines of an old vegemite jar size), shake and then pour over the vegetables once cooled.

Served with garlic greens and baked salmon.
