Roast Vegetable and salmon salad

Lunches like this one are quick and super easy to prepare when you’re organised.

Serves 1

INGREDIENTS:

  • Assorted lettuce leaves (2 handfuls)
  • Handful of rocket and baby spinach
  • 1 Spring onion
  • Handful of roast vevegtables (cauliflowe, beetroot, carrot, pumpkin, sweet potato)
  • Palm size piece of salmon
  • Macadamia oil

METHOD:

Toss salad ingredients together.

Top with salmon
