Roast Vegetable and salmon salad
Lunches like this one are quick and super easy to prepare when you’re organised.
Serves 1
INGREDIENTS:
- Assorted lettuce leaves (2 handfuls)
- Handful of rocket and baby spinach
- 1 Spring onion
- Handful of roast vevegtables (cauliflowe, beetroot, carrot, pumpkin, sweet potato)
- Palm size piece of salmon
- Macadamia oil
METHOD:
Toss salad ingredients together.
Top with salmon
